This tropical creamy coconutty pina colada recipe is one for the romantics and those dreaming of tropical holidays. One sip and you’ll feel like you’ve been transported to a beachfront paradise.
To create the thick and creamy texture this pina colada recipe calls for, we recommend using frozen pineapple. It’s simple to make, just buy a fresh pineapple, cut and store in the freezer so it’s ready to go whenever the mood strikes.
The addition of coconut yoghurt here not only enhances the flavour but also contributes to the creamy consistency. It’s an absolute essential. We recommend serving your pina colada with additional coconut yoghurt and a sprinkle of shredded coconut (no such thing as too much coconut, right?).

Ingredients
Serves 2.
● 2 cups frozen pineapple
● 1 tbsp coconut yoghurt (+ extra to serve)
● 2 shots white rum
● 1 cup Nexba Coconut and Pineapple Tepaché*
● 1 small handful ice cubes
Method
- Combine ingredients in a high power blender. Blend until creamy.
- Pour into serving glasses and top up with additional coconut yoghurt.
- Garnish with a pineapple wedge and/or shredded coconut.
